What is Gluten?
Gluten is a type of protein found in grain. Its function in the plant is to nourish the plant embryo as the seed sprouts. Since the time people first started baking bread, they have used the gluten in flour to improve the elasticity of dough. Gluten helps bread rise during leavening, and gives the bread elasticity so it doesn’t crumble when sliced or pulled apart.
